Homemade Vegan Hot Chocolate

20180120_111323I love drinking hot chocolate when it’s snowing outside! Especially with fresh popcorn.

This recipe makes 1-2 mugs of hot chocolate. Feel free to double it if you need more!

Here’s what you need to make it:

  • 3 cups of water
  • 1 cup of Almond/Soy/Cow’s milk
  • 3 tablespoons of Hershey’s cocoa
  • 5 tablespoons of sugar
  • 1 dash of vanilla

To start off, put a pot on the stove with three cups of water and the three tablespoons of Hershey’s cocoa on medium heat. Whisk the water and the cocoa until all the cocoa chunks are dissolved in the water.

Gradually add the sugar and continue to whisk the ingredients. Add a dash of vanilla.

After all the sugar is dissolved, then add the almond/soy/cow’s milk to the pan. Continue to stir the ingredients while the almond/soy/cow’s milk gets warm.

Pour in a mug and enjoy!

Honey Walnut Shrimp

This is what I made for my family for Christmas dinner yesterday!

Here’s what you need to make it:

  • 1 tablespoon of water
  • 1/2 teaspoon of garlic salt
  • Raw shrimp (around 25 pieces)
  • Crushed walnuts
  • 2-3 tablespoons of honey

Put the water at the bottom of a frying pan. Add all of the raw shrimp. Cook on medium heat. As the shrimp start to turn pink, drizzle the honey over the top. Flip the shrimp and drizzle the other side of the shrimp with honey.

Add the walnuts at the end and enjoy!

Homemade Cinnamon Rolls

This is one of my favorite things to eat around Christmas!


Preheat your oven to 350 degrees!

Here’s what you need to make it:

  • 8 oz of warm water
  • 1 egg
  • 3 cups of flour
  • 1/2 teaspoon of salt
  • 2 tablespoons of sugar
  • 1 tablespoon of yeast
  • 1/2 cup of brown sugar
  • 2 teaspoons cinnamon
  • 1 tablespoon of softened butter cut in fourths
  • 1/2 cup of melted butter

Put the water, yeast, and sugar together and let it sit until you can smell that the yeast has been activated. (It smells like bread when the yeast is activated).

Add the flour, salt, eggs, and softened butter and mix until the dough forms.

Let the dough rise for 30 minutes.

Roll out the dough on a pastry mat and sprinkle flour on the bottom of the mat and around the rolling pin. This makes it so the dough will roll out instead of sticking.

Melt 1/2 cup of butter and spread it around the dough with your fingers so it is evenly spread across the dough. Mix the cinnamon and sugar in a separate bowl. Sprinkle the cinnamon and sugar over the dough and the butter.

Roll the dough together. Cut the rolls using dental floss.

Place in a pan and let them rise for between 30-60 minutes.

Bake for 15-20 minutes at 350 degrees.

Place your favorite cream cheese over the cinnamon rolls!




Baked Breakfast Bites

It honestly blew my mind how yummy these were!

Breakfast Bites

Preheat your oven to 350 degrees.

Here’s what you need to make it:

  • 2 slices of bacon
  • 5 eggs
  • 1/2 cup of shredded cheese
  • 2 tablespoons of heavy whipping cream

Mix all of the ingredients in a bowl. Make sure that you whip it really well so there’s air in the whipping cream. This will help the mixer rise and stay together when it bakes.

Pour the mixture into mini-muffin tins (spray the tins with oil first).

Bake for 12 minutes at 350 degrees and enjoy!

Fall Salad

This is really quick, healthy fix!


Here’s what you need to make it:

  • Spinach
  • Honeycrisp apple’s
  • Cucumber
  • Diced walnuts

That’s it! Throw it all on a blow or on a plate and enjoy! I would recommend using olive oil and salt for a salad dressing.

Scrambled Eggs

This is a really quick, yummy fix!


Here’s what you need to make it:

  • Green peppers
  • Eggs
  • Salt and Pepper
  • Cheese
  • Canned chicken

I always start with the eggs first and then add everything else while they’re cooking!

Homemade Pesto Sauce

This is seriously so yummy! It does take a lot of time to make it though.


Here’s what you need to make it:

  • 2 cups of crushed Basel leaves
  • 1 tablespoon of minced garlic
  • 1/2 crushed walnuts
  • 1 cup of olive oil
  • 1/2 cup of Parmesan cheese
  • 1 dash of lime juice
  • 1/2 teaspoon of salt

You do need a food processor to make this! I would start by crushing up the Basel leaves. Gradually add in the olive oil. Add the other ingredients one at a time while mixing with your food processor… and that’s all!

Roasted Surprise

Here’s another quick fix that only requires some chopping and 8-10 minutes in the oven!


Preheat your oven to 350 degrees.

Here’s what you need to make it:

  • Coconut oil
  • Squash
  • Sweet potatoes
  • Mushrooms
  • Parsley (if you’re feeling fancy)

Spread the coconut oil all over the cookie sheet. Chop up all of the ingredients and place them on the pan! Bake for able 8-10 minutes and you’re good to go!
