Mini banana coconut muffins are the perfect grab-and-go breakfast item or snack!
Here are the ingredients:
- 2-3 overly ripe bananas
- 1/3 cup of melted coconut oil
- 1 tps of baking soda
- Pinch of salt
- 1/2 cup of sugar (optional)
- 1 large egg, beaten OR 2 Tbsp of applesauce
- 1 tps vanilla extract
- 1 1/2 cups of flour (GF or non-GF)
Preheat the oven to 350. Mash the overly ripe bananas in a mixing bowl until they are a smooth. Stir in the melted coconut oil. (It usually takes about 20-30 seconds to melt the coconut oil if it’s hardened). Next, mix in the baking soda and salt. If you’re feeling really healthy, then you skip putting in the sugar. Then add egg or applesauce. Applesauce is my favorite egg substitute! It is perfect for if you are out of eggs or are allergic to eggs. All that’s left is to add the vanilla and flour! I have mini muffin tins that I like to use. It takes them approximately 6-8 minutes to cook.
