IMG_20190227_105838_756Stuffed peppers are the absolute best meal to make when you have leftover rice! I had some wild rice left over so I put some black beans in rice and made it a meal!

Here are some of the things you can put in your stuffed peppers:

  • Chicken/pork/beef
  • Black Beans
  • Wild/Brown/white rice
  • Peppers
  • Sweet onion
  • Mushrooms
  • Corn
  • Carrots
  • Celery
  • Cheese 
  • And anything else that sounds yummy to you!

First, I prepared the rice. If I am making it fresh than I put it in the rice cooker and if I am using leftover rice I heat it up. Then I dice up the green pepper, sweet onion, mushrooms, grated carrots and cook them on the stove. Then I mix those in with the rice. I had some black beans leftover so I mixed those in with the rice as well. If all you have are rice and beans, you can totally just throw those in your pepper and it will also taste fabulous. 

Just remember, if you are using leftovers to stuff your peppers, heat up the rice, beans, meat, and whatever else you are putting in your pepper before you stuff it! If you are making it fresh, then don’t worry about heating anything up.

After the peppers are stuffed, I put them on a cookie sheet and bake them for 5 minutes at 350 degrees. It’s all ready to eat when you take it out of the oven!
