I think this is my newest favorite recipe! It’s basically a breakfast burrito, but it’s in a pepper instead of a tortilla!

Here’s what you need to make it:

  • Eggs
  • Cheese
  • Black beans
  • Green onions
  • Bacon
  • Parsley (optional)
  • Bell pepper

I scrambled my eggs with the cheese, bacon, and green onions. After that was cooked, I took all the seeds out of the pepper. I mixed the black beans and the egg combo together inside the pepper. Then, I sprinkled the parsley on top to make it pretty!

(If you want to toast the pepper then cook it for 5-8 minute at 350 degrees to warm it up!)

That’s it! You’re done.
