I am really good at spending too much money on food and not being able to eat it all. I love eating a variety of foods and it’s a little hard to do that when you’re only making meals for one person. I threw this together one night when I really wanted to go to the store but instead used some creativity to make this meal.

Preheat your oven to 350 degrees.

Here’s what you need to make it:

  • 1 cup of cooked rice
  • 2-3 cups of cooked spinach
  • 1 cup of chicken broth
  • 2-3 cooked  or canned chicken tenders
  • Salt and pepper

I had all of these ingredients in my fridge but I hate eating leftovers so I decided to throw them all together and make this concoction. Put the rice on the bottom of your brownie pan. After you cook/steam your spinach you need to drain the water out of it. This is the most important step! Everything about your meal will be soggy if you don’t drain your spinach so drain as much of the water out as you can. Put the cooked spinach on top of the rice. Break up the canned or cooked chicken tenders and then evenly drizzle the chicken broth across the pan. Shake salt and pepper on top and put it in the oven!

Bake for about 20-30 minutes and you’re done!
